Ingredients

Coconut Curry Sauce,
2 cups Coconut Milk
1 tblsp Thai Curry paste
2 tsp Curry powder
2 tsp minced fresh Ginger
Dash Cayenne pepper
Other ingredients,
500 gm boneless skinless Chicken tight, cut into small pieces
2 tblsp cooking Oil
1tsp Garlic, minced
1 medium onion, chopped
2 green chili, slIced
2thai chili(red)
Salt to taste
1 tblsp Curry powder
1.5 tblsp peanut Butter
1 Cinnamon stick
Chopped fresh cilantro leaves, for garnish
Lime wedges, for serving

How to make Thai Coconut Curry

METHOD:

For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
Put oil in pan over medium heat and add onions. Cook until translucent and beginning to brown. Add the chicken & garlic, cook few minutes & season with salt and pepper and stir in curry powder. Add cinnamon stick, saute chicken until lightly brown. Add the peanut butter and allow it to melt & coat the chicken and wait to release flavor.
Pour the coconut curry sauce over the chicken and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Adject salt and pepper, if needed. Garnish with cilantro if u like & serve with lime wedges, if desired.
