Small shell pasta 375 g
Vegetable oil 1 tbsp
Shelled or frozen broad beans 250 g
Chilli paste 1 tbsp
Chicken stock 1 ½ cup
Radishes, thinly sliced 6
Chopped fresh parsley 2 tbsp
Fresh parmesan cheese 30 g
Garlic Dressing
Olive oil ¼ cup
Cider vinegar 1 tbsp
Garlic 1 cloves
Black pepper
How to make Chilli Broad Bean Salad
METHOD:
• Cook pasta in boiling water in boiling water in a large saucepan following packet direction drains, rinse under cold running water. Then drain again and set aside to cool completely
• Heat oil in large frying pan and cook board beans and chilli paste over a medium heat for 3 minutes. Stir in stock bring to simmering, cover and simmer for 10 minutes. Drain off any remaining liquid and set aside to cool
• To make dressing place oil, vinegar garlic and black pepper to taste in a screwtop jar. Shake well to combine
• Place paste, board bean mixture radishes, parsley and parmesan cheese in a salad bowl. pour dressing over and toss to combine.
