• 1 onion finely chopped
• 4 tablespoons vegetable oil
• 500g (1 1/4 lb) potatoes, peeled and diced
• 1 teaspoon salt
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon ground turmeric
• 1/4 teaspoon ground cumin
• 2 tomatoes finely chopped
How to make Aloo ki Bhujia
METHOD:
1. Brown onion lightly in oil through medium size frying pan.
2. Stir in salt, cayenne, turmeric and cumin then add potatoes and cook till 10 minutes and stirring occasionally.
3. Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes. Then gurnish it through coriander and serve hot Aloo ki Bhujia.

Potato is very common vegetable which is always available at home. Make this potato bhaji and serve on lunch or dinner with roti and some chutney.
I really like this recipe. I make it fairly regularly and my husband loves it. The trick is to cook it over medium heat so the potatoes and onions don't burn.
If you don't like aloo in your paratha like me, aloo ki bhujia is the best treat. The first time I heard of it, I thought it was some Indian dish but wow it's delicious.
