Yakhni Pilaf

Yakhni pilaf recipe or yakhni pulao is a scrumptious rice dish you must enjoy. Prepared with mutton and cinnamon, fennel, peppercorns, fennel and coriander as spices.

Ingredients

For stock:
-1 lb goat /lamb meat
-1 medium sized onion
-1 tsp salt
-1 tbsp ginger garlic paste
-1/2 tsp black pepper powdered/red pepper may also be used
-Add with enough water to cover the meat and pocket.

Pocket Ingredients:
-3 garlic
-3 cloves
-2 cinnamon stick
-10 pepper corns
-1 tbsp fennel
-1 tbsp cumin
-1 tbsp coriander seeds

How to make Yakhni Pilaf

Method

1. -Boil the above ingredients together and leave a stock of 3/4 cup.
2. -Refrigerate the stock for 2 hours and take out a fatty layer that comes while it cools down.
3. -Add 2 cups of soaked Rice
4. -Gently stir the ingredients together.
5. -Cook till Rice are done.
6. -serve with fried onions on top

How to Make Yakhni Pilaf Recipe (Yakhni Pulao):


  • First boil all the ingredients together and leave a stock of 3/4 cup.
  • Place the stock in refrigerator for 2 hours and then collect the fatty layer (which is formed while keeping in refrigerator) into another bowl.
  • Now add 2 cups of soaked rice.
  • Stir the ingredients nicely together.
  • Cook until rice are cooked well.
  • Yakhni pilaf recipe is ready to serve.
  • Enjoy hot with raita and chutney.

Wow, what a lovely dish yakhni pilaf recipe is.. This is the first time when I searched its recipe, because before it was my sister who used to make lots of rice recipes for whole family members but now she is married.

what is meant by pilaf? I see it while searching recipes on internet , i see recipe names like yakhni pilaf, chicken pilaf, etc. etc. I think it is the other name of pulao but why it named differently? is there some difference in the recipe?
