500 grains mutton (cut into serving portions)
100 grams onions
1 tbsp garam masala
1 lime-sized ball of tamarind
ghee for frying
1/4 dry coconut
poppy-seeds
3 piece ginger
5 flakes garlic
1 tbsp each of cumin and coriander seeds
1 cup ghee
2 piece cinnamon stick
2 cloves
2 large cardamoms
1 bay leaf
salt and chilli powder to taste
1 tsp turmeric powder
silver or gold foil
1 cup fresh coriander leaves
How to make Poppy-Seed Curry
METHOD:
Cover the tamarind with hot water for 5 minutes and then squeeze out the juice.
Fry the coconut and poppy-seeds and grind to a line paste along with the singer, garlic, cumin, coriander seeds and coriander leaves.
Mix into the tamarind, along with the garam masala.
Mince the onions.
Separately heat the ghee and add all the spices, salt and turmeric powder.
Mix in the onions and fry to a light color.
Now add the mutton and fry to a' rich red color.
Cover with a cup of hot water and cook till the mutton is almost done, then add the tamarind mixture and continue cooking till the mutton is tender and dry.
Keep frying till the ghee floats to the top.
Cover with foil and serve at once.
