1 Duck or Chicken (cut into pieces)
6 Medium-Sized Onions
2-Inch Fresh Root Ginger
3 Green Chillies
3 Cloves Garlic

1 Teaspoon Chilli Powder
2 Tablespoons Ground Coriander Seeds
2 Teaspoons Ground Cumin Seeds
1 Teaspoon Ground Cloves
½ Teaspoon Ground Cardamoms
½ Teaspoon Ground Cinnamon
1 Teaspoon Turmeric powder
¾ Pint (U.S. 2 cups) Vinegar
Salt to Taste
Oil for Frying

How to make Goan Vinegar Curry (Goa Moli)


Fry duck or chicken pieces in a little oil until golden brown.
Keep aside.

Slice onions, ginger and green chillies, crush garlic and fry for five minutes.

Combine the ingredients for masala with enough vinegar to make a paste, add to the ingredients in the pan and fry for a further 10 minutes.

Add the duck and mix well. Add the remaining vinegar and the salt and cook on a low heat till tender.

Serve hot.
