اجزاء:
•بڑے بڑے سخت کچے آم_____ 2 کلو گرام
•چینی_____ ڈیڑھ کلو گرام
•پانی_____ 3 پاؤ
•لیمو_____ 3 عدد
•الائچی سبز_____ 15 عدد
•روح کیوڑہ_____ 1چائے کے دو چمچ
•عرق گلاب_____ 1 چھٹانک

ترکیب:

آم دھو کر گھنٹہ بھر ٹھنڈے پانیں میں چھوڑ دیں۔
پانی خشک کر کے آم چھیل لیں۔
گودے کی انچ انچ بھر پھانکیں بنائیں۔
گٹھلی وغیرہ پھینک دیں۔
پانی میں لیموں نچوڑ کر اس میں آم کی پھانکیں ڈال دیں۔
ایک گھنٹہ بعد دوسرے پتیلی میں تازہ پانی ڈال کر پھانکیں ڈالیں گل جائیں تو خشک کرلیں۔
پانی میں چینی قوام تیار کریں۔
جھاگ پیدا ہونے لگے تو جھاگ اتار کر اس میں الائچی کے دانے روح کیوڑہ اور عرق گلاب بھی ڈال دیں۔
چند منٹ بعد پھانکیں بھی ڈال دیں۔
وہ تارکی کی چاشنی تیار ہو جائے تو ٹھنڈا کر کے مرتبان میں بھر لیں۔
