4 Brinjal
1/2 kg Yogurt
1 cup Fresh milk
4 Green chilies chopped
1/2 bunch Coriander leaves chopped
1/2 bunch Mint leaves chopped
1 tsp Black pepper crushed
1 tsp Roasted & crushed cumin
as required Sugar
to taste Salt
for Baghaar
4 Whole red chilies
Few Fenugreek seeds
Few Curry leaves
1 piece Coal
1/2 cup Oil
1/2 tsp White cumin seeds
How to make Dahi Kay Sath Dhowain Walay Baingan
METHOD:
Cut brinjal into round slices and soak in water as required.
In a bowl mix together ½ kg yogurt, 1 cup fresh milk, salt to taste, 1 tbsp sugar, 4 chopped green chilies, ½ bunch of chopped coriander leaves, 1 tsp roasted ground cumin and 1 tsp all spice powder. Mix well and keep aside.
Now dry brinjal slices and fry in hot oil.Now spread a layer of spiced yogurt in a serving dish. Arrange fried brinjal slices on yogurt.
Pour the remaining yogurt on top. Put a burning coal in dish, drop some oil and cover for 2 minutes.
Now remove coal.In separate pan heat ½ cup oil, add in a pinch of fenugreek seeds, few curry leaves, 4 whole red chilies and ½ tsp cumin seeds. Pour baghaar on top of yogurt mixture and serve.
