Vermicelli Pudding (Sevian) Recipe

3 oz. unSalted Butter
6 oz. vermIcelli
8 oz. Sugar
¾ Pint (U.S. 2 cups) Milk pinch of Saffron powder
6 crushed Cardamom seeds
1 oz. shredded Almonds

How to make Vermicelli Pudding (Sevian)


Heat butter in a saucepan and fry the vermicelli until golden brown — be careful not to burn it.

Pour in the milk, bring to the boil, lower the heat and simmer, covered, till vermicelli is cooked.

Stir occasionally to prevent sticking.

Uncover and cook till the milk evaporates.

Add sugar and cook uncovered till dry, stirring continuously.

Add cardamom and saffron.

Serve on a plate garnished with shredded almonds.

Note: Preparation time 5 minutes, Cooking time 30-40 minutes, To serve 4
