2 pints (U.S. 5 cups) Jersey milk 6 oz. sugar
6 cardamom seeds

How to make Carrot Pudding (Gajjar Kheer)
Method
Wash, peel and grate carrots. Boil the milk for about 30 minutes till reduced by half. Add the carrots and cook till mixture thickens. Add the sugar and crushed cardamoms and continue to cook till thick. Decorate with chopped nuts and raisins. Serve hot or cold.
