1 pepper, roughly chopped
1 red onion, roughly chopped
1 large tomato, roughly chopped
feta cheese (as much as you like)

How to make Tomato and pepper omelette with feta cheese
METHOD:
In a medium size skillet, add pepper, onions, tomato's, salt and pepper. Saute the vegetables until they have all completely softened. ( Optional, add sojouk to the vegetables and allow to cook for additional two minutes.)
In a small bowl, mix eggs, salt and pepper with a fork.
Add the mixed eggs over the sauteed vegetables, slightly mix. Scatter pieces of feta cheese over the eggs and cover skillet. Cook over low heat for about 5 minutes.
Serve with pita bread
