When cloves start crackling, add boiled rice in the pan

When sugar is mixed and rice release water, increase flame so that sugar water gets dry

When rice is ready, spread food color all over the rice


Add chopped almonds, pistachios, coconuts, asharfi, gulab jamuns, cham cham, khoya and cover for one minute.

Preparing Mutanjan Rice

Ingredients:

  • Rice (Saila/Parboiled): 1/2 kg
  • Sugar: 1/2 kg
  • Ghee: 1 cup
  • Cloves: 2 to 3
  • Green Cardamom: 3 to 4
  • Cinnamon: 1 small stick
  • Food Color (Red, Green & Orange): 1/4 teaspoon

For Decoration:

  • Asharfi: 1/8 kg (red, green or whichever available)
  • Almonds: as per taste
  • Pistachios: as per taste
  • Coconuts: thin chopped
  • Khoya: 1/4 kg
  • Gulab Jamun: 1/8 kg / as per taste
  • Cham Cham: 1/8 kg / as per taste

NOTE: Gulab Jamun and cham cham should be small. If they are large in size, cut them into small pieces.


Method:

Preparing Mutanjan:

First of all boil rice.
Transfer them in a strainer and rinse under cold tap water.
Rinsing rice with cold water prevents sticking of rice after cooking.

Method:

Heat ghee in a saucepan for 3 to 4 minutes. When ghee is heated, add green cardamom, cloves and cinnamon.

When cloves start crackling, add boiled rice and sugar as well. Mix them.

As sugar is dissolved, increase the flame in order to dry its liquid.

Do not stir ladle repeatedly. This will break the rice.

When rice water is dried, mix food color with 1 tablespoon water and pour on rice. Place on dam (steam-cook).

When rice is completely cooked, spread some food colored rice so that color mixes all over the rice.

Finally, add asharfi, almonds, pistachio, coconut, khoya, gulab jamun and cham chams and steam-cook for one minute.

Tasty Mutanjan is ready. Enjoy with family!
