چاول ایک کلو
بکرے کا گوشت سوا کِلو
دہی ایک پاؤ
ٹماٹر ایک پاؤ
گھی ایک پاؤ
دودھ حسب ضرورت
ہرا دھنیا ایک گٹھی
لال مرچ چند ایک
لہسن آدھا پاؤ
ہری مرچ آدھا پاؤ
سیاہ زیرہ آدھا چمچ چائے کا
لونگ پانچ عدد
نمک حسب ذائقہ
الائچی چھوٹی پانچ دانے
ادرک دو چھٹانک
پو دینہ ایک گٹھی
سفید زیرہ دو چمچ چائے کا
دار چینی تین ٹکڑے
زعفران یازرد رنگ مناسب مقدار

ترکیب:

پہلے گھی میں پیاز بھون کر اس میں ثابت ہری مرچ ڈال دیں۔ پھر تھوڑی دیر بعد دھنیا اور پو دینہ ڈال دیں۔ پھر سفید زیرہ اور باقی گرم مصالحہ بھی ڈال دیں اور گوشت کو بھون لیں۔ اس میں ٹماٹر اور دہی بھی ڈال دیں۔ جب اچھی طرح بھون لیں تو اس میں تقریباً تین کلو پانی ملا دیں۔ اور پکنے دیں۔ جب پانی میں دو چار ابال آجائیں تو اب اس میں چاول دھو کر ڈال دیں۔ کچھ دیر تک پکنے دیں۔ جب دم ہونے کے قریب ہو جائے تو دم دینے سے پہلے دودھ میں زعفران یا زرد رنگ گھول کر ڈال دیں اور مزید پکنے دیں۔ جب ایک کنی رہ جائے تو دم پر لگا دیں اور پندرہ منٹ کے بعد اتار لیں۔ بریانی تیار ہے۔
