Carp (long fillet pieces)………………½ kg
White pepper powder………………½ tsp
Salt………………½ tsp
Oil………………for frying
Cucumber, spring onions, lettuce………………for decoration
Ingredients for batter
Egg………………1
Baking powder………………½ tsp
Cornflour………………2 tbsp
Refined flour………………3 tbsp
Cold water………………as required
Oil………………¼ cup
METHOD:
• Mix together all ingredients for batter.
• Marinate fish with batter and keep aside for ½ hour.
• Coat fish with batter.
• Heat oil in a wok and fry fish golden; remove on absorbent paper.
• Decorate serving dish with cucumber, spring onions and lettuce; place fish; serve.
