ادرک لہسن پسا ہوا۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔ دو کھانے کے چمچے
پیاز۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔ دو عدد درمیانی
ٹماٹر۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔ تین عدد درمیانے سائز کے
لال مرچ پسی ہوئی۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔ ایک کھانے کا چمچہ
ہلدی۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔۔ آدھا چائے کا چمچ

Fish Biryani banane ka tarika



ترکیب:
دیگچی میں تیل کو دو تین منٹ ہلکا سا گرم کریں اور اس میں میتھی دانہ ، رائی، کڑی پتہ اور ہری مرچیں ڈال کر پکائیں۔پھر پیاز ڈال کر سنہری فرائی کرلیں۔ لہسن ادرک اور ٹماٹر ڈال کر کچھ دیر تک بھونیں۔ یہاں تک کہ دونوں چیزیں اچھی طرح گل جائیں اور تیل علیحدہ ہوجائے۔
نمک ، لال مرچ،ہلدی اور دھنیا ڈال کر ہلکا سا پانی کا چھینٹا ڈالیں اور مزید کچھ دیر تک بھونیں اور بھوننے کے بعد اسکے اندر مچھلی کے قتلے ڈال دیں۔تین سے چارمنٹ پکا کر احتیاط سے مچھلی کو علیحدہ کرلیں۔
اس مصالحے میں چاول ڈال کر اچھی طرح بھونیں اور مزید کچھ دیر کے لئے پکنے دیں۔ ڈھک کر درمیانی آنچ پر خشک ہونے تک پکائیں۔
اوپر سے مچھلی کے قتلے رکھ کر ہلکی آنچ پر پانچ سے سات منٹ کے لئے دم پر رکھ دیں۔ مچھلی کی قتلوں کو اٹھا کر علیحدہ رکھیں۔ پھر بریانی کو ڈش میں نکال کر ان قتلوں کو سجا کر گرم گرم پیش کریں۔

Namak Hasb e zaiqa
Adrak lehsan pisa hoa 2 khanay k chamchay
Piyaz 2 adad darmiyani
Timatar 3 adad darmiyany size k
Laal mirch pisi hoi 1 khanay ka chamcha
Haldi adha chaye ka chamcha
Meethi daana chand daanay
Raai ½ chaye ka chamach
Tail adhi piyaali

Banane ki tarkeeb


Daigchi main tail ko 2 sy 3 minute halka sa garam karain aur is main methi dana, raai, kari patta aur hari mirchain daal kar pakaain. Phir piyaz daal kar sunehri fry kar lain. Lehsan,adrak aur timaatar daal kar kuch dair tak bhoanain. Yahan tak k dono cheezain achi tarha gal jaain aur tail elehda hojaye.
Namak, laal mirch, haldi aur dhaniya daal kar halka sa pani ka chhenta daalain aur mazeed kuch dair tak bhonain aur bhonnay k baad is masalay main chawal daal kar achi tarha bhonain aur mazeed kuch dair k liye paknay dain. Dhak kar darmiyani anch per khushk honaay tak pakaain.
Ooper sy machli k qatlay rakh kar halki anch per panch sy saat minute k liye dam per rakh dain. Machli ki qatlo ko utha kar elehda rakhain. Phir biryaani ko dish main nikaal kar in qatloo ko saja kar gram garm paish karain.

Fish Biryani Recipe (Translated in English)


Ingredients:
  • Fish Chunks: 1 kg
  • Rice: 1 kg
  • Salt: as per taste
  • Ginger Garlic Paste: 2 tbsp
  • Onions: 2 medium
  • Tomato: 3 medium
  • Red Pepper Powder: 1 tbsp
  • Turmeric: 1/2 tsp
  • Fenugreek Seeds: a few
  • Mustard Seeds: 1/2 tsp
  • Oil: 1/2 cup


Method for fish biryani recipe:

  • First heat oil for 2-3 minutes in a saucepan.
  • Add fenugreek seeds, mustard seeds, curry leaves and green chillies and cook.
  • Add onions until golden brown.
  • Add ginger garlic and tomatoes and roast until tender and oil is separated.
  • Add salt, red pepper, turmeric and green coriander, add little water and cook bit more.
  • Then add fish chunks, cook for 3-4 minutes and separate fish carefully.
  • Add rice to the spice mixture and cook more for some time.
  • Cover the pan and cook until it is dried.
  • Place fish chunks and cook for 5 to 7 minutes pan covered (dam pe rakh den).
  • Pick all fish chunks one by one and put in a tray separately.
  • Now dish out biryani, place fish and serve hot.

This is absolute delish biryani. I always hesitate to prepare fish biryani as it is not like mutton and chicken. If anything goes wrong, it may spoil the whole thing and smell’s bad. I tried for the first time. Your instructions and pictures everything out of the world.
