• Mutton ½ kg
• Rice ½ kg (soak rice for 30 minutes)
• Onion 4 tbsp (fried)
• Ginger paste 2 tbsp
• Garlic paste 2 tbsp
• Yogurt 2 tbsp (whipped)
• Oil 1/3 cup
• Rose water or kewarrah 1 tsp
• Saffron few drops
• Salt to taste
• Whole All Spice:
• Black cumin seeds 1 tsp
• Bay leaf 1
• Cinnamon stick 1 piece
• Black pepper 10
METHOD:
• Boil the mutton in a large pan, with added 8 glasses of water, salt, ginger paste and garlic paste.
• When mutton is half done and water becomes 4 glass turn off the flame.
• In other pan add oil when oil is heated add ginger paste, garlic paste, whole all spice, salt, whipped yogurt and fry onions fry all ingredients until light brown.
• Add rice without water and also fried rice with spice after that add mutton soak and cook in a high flame for 5 minutes.
• After that when pilao is half cooked low flame until rice is completely cooked.
• Serve it with raita.
