Methi Pakora
Gujarati methi pakora is the love for snacks lovers. Crispy gram flour-coated fritters revealing the green leaves of fenugreek, enriched with turmeric, corn and besan, this becomes one of my favorite appetizers recipes.

¼ tsp kg fresh fenugreek leaves
4 tbsp wheat flour
4 tbsp besan (gram flour)
½ tsp turmeric
1 tsp black peppercorns
4 tsp oil for batter
¼ tsp coriander seeds
6 green chillies (ground)
A small piece of ginger (chopped)
4 tsp curd
2 tsp sugar or 2 ripe bananas
A pinch of a asafetida (heeng)
Oil for frying
METHOD:
Remove the thick stem of fenugreek leaves and wash and drain the water.
Chop finely.
Add gram flour (besan) and wheat flour in a vessel and then add oil and remaining ingredients.
Make a batter using a little water if necessary.
Heat the oil for frying and put in a teaspoon full of batter at a time until all batter is consumed.
Deep fry on medium fire unless they turn golden brown.
Do not thin the batter.

What a tasteful methi pakora dish, I will make it tomorrow after the lunch. I had made some snack recipes past year but then I got busy in exams, now I am free and back to my hobbies.
People tell me to eat spinach but I have found that methi (fenugreek) is more powerful than spinach. And so it is my suggestion to all that eat methi more in your foods. Eating pakora is another good way to consume up methi and I choose it often for iftar time.
Today, it is first of Ramadan ul Mubarak in Pakistan, feeling blissful and blessed. Its time is near for iftar preparation, looking around and thinking what items to make today. Wish I could make this methi pakoda but methi is not here at home. Looking around for other options for iftar, may be mix veg pakora will be the snack for today.
I like fenugreek meals as it is one of the healthiest vegetables in the world. And if there is some snack made with fenugreek, that's a double delight. Actually, I am looking for where to source it these days. If someone had stored it in freezer, that's the only way to get it and then make it's pakora.
I knew how to make palak pakoras but I never knew about making pakodas with methi and today I got its recipe. I am very happy to get it as I was looking for an authentic way to prepare my favorite snack and now I can do!! yahoo!
