Ingredients

Butter 50 grams - melt it in microwave for 30-40 sec
Egg whites 4
Egg yolks 2
Sweetened Condensed Milk- 1 can (aaprox 400 gms)
Zest and JuIce of 1 large Lemon
White Sugar- 1/4 cup
NICE Biscuits- 7- 11 should be enough to layer the bottom and partly on sides of the baking dish

How to make Lemon Meringue Pie

METHOD:

1- Grind the biscuits finely and then add melted butter in them and run the chopper again .

2- Spread this mix in a greased bowl as a flat smooth layer but raised at the edges of the bowl to make a seat for the meringue.

3- Put this bowl in the fridge to cool for 20 min

4- Peel the zest of one lemon (avoiding the white part of lemon ) in a bowl and squeeze the lemon in the same bowl.

5- Add the sweetened condensed milk in it and mix well.

6- Now add egg yolks one by one and mix .

7-Now spread this mixture on the layer of biscuits & butter set in the bowl earlier.

8- Put the bowl back in the fridge for another 15- 20 min.

9-Meanwhile beat the 4 egg whites and sugar in a clean bowl until firm white peaks are formed.

10- It will take some time to form firm peaks of white color.

11- With a very soft hand and carefully spread this on the dish put in the fridge earlier.

12- Place in the fan forced preheated oven at 180 degree for 7-10 min.

13- It cooks very quickly. Just when the top layer starts turning golden its ready.
