Ingredients
4 Eggs
2 Onions
2 Tomatoes
Curry Leaves
2 Green Chillies
1 tbsp Red Chilli Powder
Salt to taste
1 tbsp Tomato Sauce
Sugar
1 tbsp Cumin Powder
1 tbsp Coriander Powder
1 tbsp Ginger Garlic Paste
How to make Dimer Kosha - Bengali Egg Curry

METHOD:

1) Chop onion, tomato, green chillies and curry leaves.

2) Boil eggs, mix cumin and coriander powder with ginger garlic paste in a bowl.

3) Slit the eggs length wise with a knife if you like it. Light fry the egg and keep it aside.

4) Heat oil in pan then add the chopped onion. Fry it until it brown. Pour the above mixture with tomato and tomato sauce.

5) Stir well . Add green chillies and curry leaves. If necessary add little water. Cover the lid for 5-10 mins. Now add the fried eggs.

6) Serve it with rice or roti.

How to Make Bengali Egg Curry (Summarized Method):

  • First chop tomatoes, onions, curry leaves and green chillies.
  • Then boil eggs and mix cumin, coriander powder and ginger garlic paste in a dish.
  • Make a slit in eggs in length, fry slightly and place aside.
  • Heat oil in a pan and add chopped onions. Fry until they turn brown, pour the mixture of ginger garlic paste.
  • Also add tomatoes and tomato sauce.
  • Stir well and add chopped curry leaves and green chillies. Add water if you like, cover the pan for 5 to 10 minutes.
  • Add fried eggs.
  • Serve hot with boiled rice or chapati.

We would be traveling to Bahawalpur to my cousin's wedding. Other guests would come later therefore we would have lot of time to cook foods and i will make dimer kosha - bengali egg curry and some selected bangladeshi recipes as well.

Recipe is good. I was reading previous comments about the recipe. Though the recipe is good however I need to know how to chop curry leaves, it consists of a thin surface, so how come we could chop it with a knife as we can do to chillies, and onions.

I don't think Deem Kosha has any curry leaves in it. Infact use of curry leaves is minimal in bengali food.
