2 tblsp olive oil
1/3 cup finely chopped onion
1 tsp crushed garlic clove
1/3 cup carrot, finely diced
1/4 cup celery stick
450gm minced lamb or beef
2 tblsp sun-dried tomato paste (or use 1/4 cup tomato paste)
1 tblsp Worcestershire sauce
2cup beef stock
Salt & pepper to taste
1/2 tsp dry Oregano
1/2 cup sweet corn (cooked)
2 tsp cornflour (2 tblsp water to mix it)
Few baked potato with grated cheddar, to serve
How to make Baked Potato with Ground Meat topping
METHOD:
Heat the olive oil in a large pan and fry the onion, garlic, diced carrot and celery stick for 6-8 minutes. Stir in the minced meat and cook for 5 minutes until browned, then add the sun-dried tomato paste and Worcestershire sauce. Stir in the beef stock and cover and simmer for 30 minutes until very tender. Season well. Add sweet corn and dry oregano. Mix the cornflour with cold water, stir in and cook for 1 minute. Serve over baked potatoes and top with grated cheddar cheese or sprinkle cheese on baked potato and top with mince. before serving top with parsley.
