• Chicken (small breast pieces) ½ kg
• Rice (boiled) ½ kg
• Spring onion (finely cut) 250grams
• Carrot (cut into rounds) 1
• Capsicum (finely cut) 1
• Green Chilies (cut lengthwise into two) 6
• Hot spices powder 1tsp
• Black pepper powder 1tsp
• Ginger/garlic paste 1tbsp
• Oregano ½ tsp
• Red chilli powder 2tbsp
• Tamarind pulp 4tbsp
• White Vinegar 2tbsp
• Butter 2tbsp
• Salt ½ tsp
• Oil 2tbsp
How to make Rice Cooked in Foil
METHOD:
• Divide chicken breast into 2pieces each.
• Marinate with red chilies, tamarind pulp, hot spices, salt, vinegar and ginger/garlic; set aside for 1hour
• Cook chicken with oil in a covered pot till chicken is tender.
• Add all vegetable and remove from flame.
• Season rice with black pepper, oregano and salt and place over aluminum foil; arrange chicken and vegetable on top. Place a piece of red-hot coal over dish.
• Put butter on top and wrap the fail.
• Bake in a pre-heated oven at 200c for 20mint then serve hot.
