200 gm Paneer (cottage cheese),
900 gm Spinach
100 ml Fresh cream
4 medium size Green chilies
1 tblsp chopped Garlic
Salt to taste
1 tsp Cumin seeds
3 tblsp Oil
1 tblsp Lemon juice (optional)
METHOD:
Wash spinach thoroughly in running water and blanch in salted water for two to three minutes. take out from boiling water and refresh chilled water, it ll help to maintain fresh green color of spinach. Squeeze out excess water & grind into paste along with green chilies. Cut the cheese (paneer) into half inch pieces.
Heat oil in a pan. and fry half of cheese pieces on medium high heat. Take it out from oil and keep a side. now in same oil add garlic and sauté for half a minute when it is golden add cumin seeds. Stir not to burn then add the spinach puree and stir. Check seasoning. balance salt, if need more spice, can add more chili paste or can add black pepper. On boil stage of Gravy (if very thick, can add 1/3 cup of water), add the uncooked cheese (paneer). Cook for 2 minutes then add lemon juice & finally add fresh cream. Mix well and garnish with fried cheese pieces. Serve with Naan or any other favorite Bread like Taftan or Chapati
