Mutton Nihari

Mutton nihari recipe is made with the meat alongside with bone marrow meat and unlike other dishes; the texture for this is deliciously smooth and sticky. • Mutton: 1 kg (medium sized pieces)
• All-purpose flour (maida): 2 tablespoons dissolved in 1/4 cup water
• Cinnamon stick: 1 medium
• Bay leaves: 2 pcs
• Cloves: 8 pcs
• Ginger & garlic paste: 2 tbsp
• Red chilli powder: 1 tsp
• Salt: as per taste
• Coriander powder: 1 tsp
• Turmeric powder: 1/2 tsp
• Yogurt: 3 tbsp
• All-spice powder (garam masala): 2 tbsp
• Cooking oil or Ghee: 1/2 cup
• Nutmeg: few pinches
• Cardamom: 2 pcs

Spice masala (grind following ingredients to make fine powder):

• Fennel seeds: 2 tbsp
• Whole black peppercorns: 1/2 tsp
• Cumin seed: 1/2 tsp

Garnishing Ingredients:
• Onion: 1 (cut into thin strips - fried to brown)
• Green chillies: 2 chopped
• Ginger: 2 strips (thin sliced)
• Coriander leaves 3 tbsp (chopped)
How to make Mutton Nihari


Wash and clean the pieces of mutton.
Heat oil in a cooking pan, add cloves, bay leaves, cinnamon stick and ginger garlic paste.
Add mutton to the pan and fry for 2 to 3 minutes.
Add red chilli powder, coriander powder, turmeric powder, yogurt, all-spice powder and fry until oil is separated.
Add salt, nutmeg powder, cardamom, spice masala and 3 cups of water; cook at low flame for 3 to 4 hours.
Finally, add the flour water and cook for nearly 10 minutes.
Delicious mutton nihari is ready.
Now sprinkle garnishing items i.e. coriander leaves, sliced ginger, browned onions and green chillies.
Serve hot with chappati, naan or boiled rice.

Preferably, the dish is supposed to cook on slow flame so try not to cook it faster. The more time it takes to cook, the more delicious mutton nihari recipe will be.
