8 oz. rice
scant pint (U.S. 21 cups) salted water
2 tablespoons oil
1 large raw mango
or 2 cooking apples
2 teaspoons gram dhal, soaked for I hour
1 teaspoon chilli powder
pinch dry mustard
½ teaspoon turmeric powder
pinch of asafoetida
2 dry red chillis
2 bay leaves
How to make Mango Rice (Am Chawal)
METHOD:
Wash the rice thoroughly and soak for 30 minutes. Boil in salted water until tender but firm. Drain and SW in one tablespoon of the oil lightly with a fork so that the grains remain separate. Now peel the mango or apples, cut into thin wedges mix with rice. Heat remaining oil in a pan, drain and lightly brown the dhal. Add the ground spices and fry well for five minutes. Add the chillis and bay leaves and fry for one minute. Mix well with the rice, cover with a close-fitting lid and leave on a very low heat lentil serving time.
Note: Preparation time 10 minutes, Cooking time 25-30 minutes, To serve 4
