Ingredients
500 g (lb) young leeks
60 ml (2 fl oz/ ¼ cup) olive oil
1 onion, finely chopped
3 tomatoes, skinned, seeded and chopped
1 clove garlic, crushed
155 ml (5 fl oz/ 2/3 cup) dry white wine
12 coriander seeds, slightly crushed
1 bay leaf
Pinch cayenne pepper
2 teaspoons chopped fresh thyme
Chopped black olives and thyme, to garnish
How to make Leeks A LA Greque

METHOD:

Wash and trim leeks. Cut into 5 cm (2 in) lengths, then blanch for 2 minutes. Drain and set aside.
Heat 3 tablespoons oil in a large saucepan. Add onion and I tablespoon water and cook gently for 8 minutes. Add tomatoes, garlic, wine, coriander seeds, bay leaf and cayenne pepper. Season with salt and pepper and cook for about 15 minutes, or until tomatoes are pulpy. Add leeks and cook uncovered for 10-15 minutes until tender.
Discard bay leaf, then allow mixture to cool. Transfer to a serving dish, sprinkle over thyme and chill until needed.
To serve, drizzle remaining oil over leeks and garnish with chopped olives and thyme.
