Kolhapuri Chicken
Kolhapuri chicken is perfect for spicy eaters. The recipe belongs to Kolhapur region in India. The super spicy dish uses various different spices that are added with chicken and cooked in a special Indian style. Ingredients
Chicken Normal Cut: 1 kg
Fresh Yogurt: 3/4 cup
Onions: 2 chopped
Tomatoes: 3-4 chopped
Garlic Paste: 1 tsp
Ginger Paste: 1 tsp
Lemon Juice: 1 tsp
Marination Spices:
Salt: as per taste
Red Chillies: 1 tsp
Turmeric Powder: 1/2 tsp
Cumin Powder: 1 tsp
Dry Roasted Spices:
Coconut slices: 1 tbsp
Peanuts: 1 tbsp
Sesame Seeds: 1 tsp
Poppy Seeds: 1 tsp
Whole Spices:
Bay Leaves: 1 leaf
Small Cardamom: 4 pcs
Large Cardamom: 2 pcs
Cloves: 6 pcs
Black Peppercorns: 10-15 pcs
Whole Red Chillies: 4 pcs
Mace: 1 petal
Cinnamon: 2 sticks
Caraway Seeds: 1 tsp
Oil: 1 cup
Fresh Coriander Leaves: for garnishing purpose
How to make Kolhapuri Chicken
Method
Roast dry coconut, sesame seeds, peanuts and poppy seeds separately, then cool them and grind. Place aside.
Mix red chillies, turmeric powder, salt, cumin powder, ginger paste, garlic paste and lemon juice in yogurt.
Mix well and apply on chicken pieces. Place in a cool place for marination for around 1 hour.
Now fry chopped onions in oil until they turn golden.
Add whole spices to the pan and fry for a minute, then add roasted and ground ingredients and then chopped tomatoes.
Then fry all ingredients for 3 to 4 minutes.
Then add marinated chicken pieces and cook on fast flame for 5 minutes.
Now lower the heat and continue cooking until chicken is fully cooked and oil is separated.
Sprinkle fresh coriander leaves for garnishing.
Spicy kolhapuri chicken is ready to serve.
Enjoy with hot naan or chapati.
