Ingredients
• 1 kg mutton kema
• 70 gm raw papaya paste
• 50 gm roasted onion paste
• 50 gm ginger garlic paste
• 5 gm elaichi powder
• 5 gm yellow chili powder
• 40 gm chana powder
• 5 gm garam masala
• 5 gm javitri powder
• 5 gm coriander powder
• Salt to taste
• 50 ml desi ghee
How to make Galouti Kebab

METHOD:

1. In bowl place the mutton kheema add ginger garlic paste, onion paste, raw papaya, all dry powder and spices and mix well. Freeze it for half an hour
2. Set kheema make 32 pieces and make tikkis of them.
3. In a thick pan, heat ghee and fry the tikki on slow heat
4. Serve the tiki with mint chutney
5. Serve immediately and hot

Galouti kebabs belong to South Asian region, more specifically from India. These kababs are made of mutton mince and sometimes buffalo mince with papaya paste which is used to soften the meat for better cooking. It is then mixed with various spices such as cardamom powder, chili powder, coriander powder, onion paste, ginger garlic paste, all spice and javitri powder. After mixing, kebabs are formed and then fried in ghee until they are cooked.

Galouti kebab is known to be a tradition of Lucknow, a hallmark of Awadhi cuisine. Many Indian restaurants feature galouti kababs in their menu, offer it with chapati, chutney and onion rings. It's soft succulent feel always makes the eater demand for more. You can make it with meat on Eid ul Adha, with minced goat and feel the pleasure inside this special kebab food.
