Gajar ka Achar recipe or carrot pickles are a recipe from the pickles family that have been popular for centuries and has been made in every household in the Indian subcontinent. The dish is so popular that it is used as an everyday side dish in Pakistani homes. Without it, many dishes seem incomplete. Additionally, we have all seen our grandmother prepare a delicious, mouth-watering and tangy jar of pickles every once in a while. However, for many it can be a long past dream to learn it from the best so, here is a traditional Gajar ka Achar recipe that will tickle your taste buds and will make you want to eat more. This lip-smacking pickle dish has been the delight for many mouths due to the nutritious and delicious ingredients present in it, such as carrots, Jaggery, vinegar, dry fruits and a melange of spices that make it super delicious to eat. Ingredients

1/2 kg Carrot_gid622'>Carrot
4 tbsp Mustard seeds ground
3 tbsp Crushed red pepper
to taste Salt_gid22'>Salt
1 bottle Vinegar_gid519'>Vinegar
2 tbsp Jaggery
1 tbsp Turmeric
6 to 7 glass Water_gid27'>Water

How to make Gajar Ka Achar

METHOD:

In a pan boil ½ kg carrots cut into slices till little tender. Remove from water, marinate with 2 tbsp ground mustard seeds, 1 tbsp crushed red pepper, 1 tsp turmeric and salt to taste.

Boil 6 to 7 glasses of water with 2 tbsp jaggery, 2 tbsp ground mustard seeds, 1
tbsp crushed red pepper, 1 tsp turmeric, salt to taste and 1 bottle of vinegar.

Now keep the boiled water and marinated carrots in sun light for 2 days.

Now mix both and keep in jar, don’t mix with a wet spoon, use after 3 days.

Good recipe. You have to be very careful about how you slice your carrots and other veggies versus how long you marinate them in the vinegar mixture.
