I've never had this before so I don't know what it should taste like. What I do know is that I do like it. It reminded me of rice pudding. I think this recipe would be better if there was more cream. There just wasn't enough of it. If I make it again I will double the cream.

The quantities and times are accurate for this recipe. Bengali payesh rice kheer is not as thick as a Western-style rice pudding, and should still be a bit fluid when cool. I like to put in about a quarter of a small can of sweetened condensed milk in payesh.
