Ingredients
100 grams dry dates
100 grams raisins
6 ripe bananas
3 litres sugarcane juice
25 grams ginger powder
25 grams cumin seeds (powdered)
1 tblsp pepper powder
1 tblsp coriander powder
salt and chilli powder to taste
25 grams each of almonds, casbewnuts, pistachios, walnuts and charoll (sliced fine)
50 grams dry mango powder
a few drops orange or yellow food colouring
How to make Banana Chutney
Method
Soak dates in water for 15 minutes. Drain the water, remove the seeds, and grind to a paste along with the raisins. Thinly slice the bananas. Strain the sugarcane juice through a muslin cloth, and then heat over fire. When it boils, remove the froth from the top. Add ginger powder, cumin, pepper, coriander, salt and chilli powder, As the juice thickens, *44 all the nuts, mango powder bananas, date paste and food coloring. Keep stirring till thick, like chutney. Remove from fire, cool and bottle.
