Banana Chutney

Ingredients

100 grams dry Dates
100 grams Raisins
6 ripe Bananas
3 litres Sugarcane juIce
25 grams Ginger powder
25 grams Cumin seeds (powdered)
1 tblsp pepper powder
1 tblsp Coriander powder
Salt and Chilli powder to taste
25 grams each of Almonds, casbewnuts, Pistachios, Walnuts and charoll (slIced fine)
50 grams dry Mango powder
a few drops Orange or yellow food colouring

How to make Banana Chutney

METHOD:

Soak dates in water for 15 minutes. Drain the water, remove the seeds, and grind to a paste along with the raisins. Thinly slice the bananas. Strain the sugarcane juice through a muslin cloth, and then heat over fire. When it boils, remove the froth from the top. Add ginger powder, cumin, pepper, coriander, salt and chilli powder, As the juice thickens, *44 all the nuts, mango powder bananas, date paste and food coloring. Keep stirring till thick, like chutney. Remove from fire, cool and bottle.
