• ½ kg - potato
• ½ cup - onion, finely chopped
• 2 cup - fenugreek (methi) leaves, cleaned and chopped
• 1 tsp - mustard
• 1 tsp - garlic, minced
• 1 tsp - chilli powder
• ½ tsp - turmeric powder
• 1 tsp - cumin powder
• 1 tsp - coriander powder
• 2 tbsp - lime juice
• salt to taste
• 3 tbsp - oil
How to make Aloo Methi Fry
METHOD:
1. Boil the potatoes. Peel and cut into 2 cm cubes.
2. Heat the oil. Add mustard. When it splutters, add garlic.
3. Fry till dark brown. Add onion and fry till golden brown.
4. Add the fenugreek leaves and fry very well.
5. Mix all the powders with ¼ cup of water and add. Fry well.
6. Add potatoes and salt.
7. Keep covered on low heat for 3-5 minutes.
8. Sprinkle lime juice on top and serve hot with poori, chapathi or as a side dish with rice and dal.
