Ingredients
• 8 oz. okra
• 2 green chillis
• 1-inch fresh root ginger
• 1 dessertspoon fresh coriander leaves oil for frying
• ½ teaspoon turmeric powder
• 5 cartons yoghurt
• salt to taste

How to make YOGHURT WITH OKRA (BHENDI RAITHA)
Method
Slice okra into rings. Mince chillis, ginger and coriander leaves. Heat some oil in a pan and fry okra for five minutes. Add turmeric and salt and fry for a further two minutes before adding chillis and ginger. Continue cooking gently till okra is tender. Meanwhile put yoghurt in a bowl and beat well with salt. Add to the okra, mix and garnish with coriander leaves.
