FOR PASTRY :
4 eggs
1/2 cup unsalted butter
2 cups all purpose flour
2 teaspoons sugar
1 cup water
1 tablespoon gelatin
FOR CREAM FILLING :
One packet sweet cream chilled.:
How to make Swan Delights
METHOD:
Take a saucepan and add water, sugar,salt, butterand boil.When it boils stir constantly on low flame and slowly add flour.Cook for three minutes and keep on stirring.Be careful nothing sticks to the bottom or sides.
Cool the mixture and then add beaten eggs.One egg at a time.A hand mixer is used for this.Go on mixing till the batter becomes smooth and shiny.
Take a pastry bag and fill it half with the mixture.
Preheat the oven to 200 degrees C .
In a greased non stick baking tray lined with baking sheet, pour about 2 inches of mixture in a [swan ] ove 2 inch spacal shape .Make about 16 and leave between them so that they do not stick together.
Take another baking tray, grease and line with baking sheet.
Now carefully pour pastry mix [ the rest 1/2] into long S shapes with a high pressure at start for beak and low pressure for neck.
Bake the pastries in the oven prepared for 30 minutes.They will give a nice aroma and light golden color.
Now let them cool.
To arrange, carefully cut the bodies of swans or bigger pastries into half and pour cream in between,Close and place heads and beak with gelatin and serve .
