• Almonds (badam) 1 cups
• Semolina ( suji ) roasted 2 cups
• Desi ghee 1 cup
• Sugar 23/4 cups / 400 gm
• Water 1/2 cup / 100 ml
• Silver leaves (varq) 2-3
• Vanilla essence few drops
• Almonds for serving
How to make Suji Ka Badami Halwa
METHOD:
1- Soak the almonds in boiling water for 6-7 minutes. Drain, remove the skin and grind to a coarse paste. Heat the desi ghee then sugar + water together in a pan; stir gently till the sugar dissolves completely. Bring the sugar syrup to the boil and then simmer till bubbles start forming.
2- Add the almond paste with roasted semolina and cook, stirring constantly, till the mixture leaves the sides of the pan then add the vanilla drops. Remove from heat. Spread the mixture evenly on a greased plate and smoothen the top. Keep aside to cool and decorate with silver leaves and almonds.
3- Cut into squares or diamond shapes and serve.
