Ingredients
1 ½ lb. beef or lamb
1 teaspoon saffron, soaked in
1 tablespoon water
1 oz. each pistachios, almonds, raisins
2 cloves garlic
1-inch fresh root ginger
2 onions
1 ½ , lb.pumpkin or marrow oil for frying
2 sticks cinnamon
2 cardamoms
1 teaspoon chili powder
Pinch of salt
How to make Meat and Pumpkin Curry (Pathani Petha Gosht)
Method
Trim meat and cut into cubes. Soak saffron in the water for an hour. Finely mince or chop pistachios, almonds, raisins, garlic and ginger. Chop onions; dice pumpkin or marrow and fry onions in a little oil until golden. Add nuts, raisins, garlic and ginger. Continue to fry for a few minutes then add meat, pumpkin, cinnamon, cardamoms, chilli powder and salt. Fry until pumpkin is cooked or pulped and meat tender. Add saffron, cook for a further 10 minutes and serve.
