Ingredients

1 ½ lb. Beef or lamb
1 Teaspoon Saffron, soaked in
1 tablespoon Water
1 oz. each Pistachios, Almonds, Raisins
2 Cloves Garlic
1-inch fresh root Ginger
2 Onions
1 ½ , lb.pumpkin or marrow Oil for frying
2 sticks Cinnamon
2 Cardamoms
1 Teaspoon chili powder
Pinch of Salt

How to make Meat and Pumpkin Curry (Pathani Petha Gosht)

METHOD:

Trim meat and cut into cubes. Soak saffron in the water for an hour. Finely mince or chop pistachios, almonds, raisins, garlic and ginger. Chop onions; dice pumpkin or marrow and fry onions in a little oil until golden. Add nuts, raisins, garlic and ginger. Continue to fry for a few minutes then add meat, pumpkin, cinnamon, cardamoms, chilli powder and salt. Fry until pumpkin is cooked or pulped and meat tender. Add saffron, cook for a further 10 minutes and serve.
