4 oz. fresh root ginger 1 oz. garlic
1 oz. cummin seeds 1 oz. mustard seeds
½ pint (U.S. 1t cups) salad oil
* 4 oz. tamarind, soaked in
¼ pint (U.S. cup) boiling water
4 oz. brown sugar
½ pint (U.S. 11- cups) malt vinegar
8 oz. small green chillis
How to make Green Chilli Pickle (Hari Mirch Achar)
METHOD:
* Squeeze the tamarind, discard the husk, use only the water.
Finely mince or grate the ginger and garlic, pound the cummin and mustard seeds and mix with a little vinegar to make a paste. Heat the oil in a pan and fry the paste well. Then add the strained tamarind juice, brown sugar and vinegar. Bring to the boil and add the green chillis. Lower heat and simmer for 10 minutes. Bottle when cold.
