Ingredients
8 oz. plain flour salt to taste
2 ½ oz. butter
1 dessertspoon cummin or
caraway seeds
3 tablespoons milk hot water to mix
Oil for deep frying
How to make Fried Savoury Biscuits (Matthies)
Method
Sieve the flour and salt into a mixing bowl. Heat the butter in a small pan until it bubbles. Pour it into the flour and add the cummin or caraway seeds. Stir well and add the milk and sufficient hot water to make a firm dough. Turn out on to a board and knead for 20 minutes. Roll out thinly and cut into strips, triangles or squares.
Heat oil in a deep frying pan. Fry until crisp and golden. Drain and serve.
VARIATION:
2 teaspoons of coarsley ground pepper may be added to the dough, to make spiced matthies.
