4 tiny artichokes
125 g (4oz) thin green beans, trimmed if desired
1 lettuce
1 head fennel
½ bunch radishes
2 carrots, finely granted
½ quantity garlic vinaigrette
1 quantity garlic mayonnaise
Fennel fronds, to garnish
How to make Composed Salad
METHOD:
Trim artichoke stalks, then cook in a saucepan of simmering water for 25-30 minutes, until tender. Drain and cool. Cook beans for 3 minutes. Drain and cool.
To assemble salad, arrange a few lettuce leaves, to one side,on 4 plates. Slice fennel and arrange at tractively with beans, radishes and carrot.
Remove a few outer artichoke leaves and arrange on plates. Cut artichokes in half, remove the hairy chokes. Place 2 halves on each plate. Spoon a little garlic dressing into each half. Garnish with fennel fronds. Serve salads with garlic mayonnaise.
