Boneless Chicken Breasts – skin removed & cut into small pieces
3-4 tablespoon Ginger & Garlic Paste
3-4 tablespoon Lemon Juice
1 tablespoon Chilli powder
3 tablespoon Cumin Seeds
2 tablespoon Mango Powder - Amchoor
1 tablespoon Garam Masala
8-10 tablespoon Oil
6-8 Heaped Spoons Full Fat Turkish Yogurt
1 teaspoon Orange Food Colouring
Salt to taste
to granish
Sliced Red Onions Slices
Sliced Green Chillies
Sliced Tomatoes
Handful Chopped Coriander Leaves
How to make Chicken tikka fry
METHOD:
1. Place chicken in a bowl add ginger & garlic paste and lemon juice and 10-15 minutes
2. Next add the food colouring and mix well and then the other dry ingredients and mix well again, make sure all the chicken is coated well
3. Whisk the yogurt and add to the chicken and mix
4. Lastly add the oil and mix well
5. Leave to marinate for 20-30 minutes - overnight works best
6. Heat a non stick wok and then add the contents of the bowl
7. On a high heat, let the chicken it cook till water dry’s
8. Once chicken is cooked through add the green chillies and mix well
9. Cook for another 2-3 minutes
10. Remove to serving dish and top with the red onions, green chillies, tomatoes & coriander
11. Serve immediately
