Chicken Kebab Pulao
Ingredients for kebabs :
Chicken mince - 1/2 kg minced
(Save bones of the chicken for making stock)
Egg - 1
Corn flour - 2 tbsp
Onion - 1 chopped
Green chillies - 2 -4
Coriander leaves - 2 tbsp .
Cumin seeds- 1 teaspoon
Bread slice - 1
Salt to taste
Oil for shallow frying.
Ingredients for rice :
Rice - 1/2 Kg
Onions - 2 medium sliced
Ginger garlic pasted - 1 tbsp
Cumin seeds - 1 teaspoon
Green cardamoms - 4
Cloves - 4
Black pepper seeds - 6-8
Black Cardamoms - 1
Cinnamon Sticks - 2
Star Anise - 1
Yogurt - 1/2 Cup
Red Chilli Flakes -1 tsp
Salt - to taste
Green chillies -4
Some Coriander and mint leaves .
Oil 1/4 cup
How to make Chicken Kebab Pulao
METHOD:
Method :
1.Wash bones and boil them on slow flame with 4 cups of water and make stock.
2. Soak rice for at least 30 min .
3. In food processor , put all the ingredients listed for kebabs . Mix properly. Refrigerate it until you prepare rice.
4. In large pot , fry onions in oil till light brown , then add ginger garlic paste and all the whole spices . Fry for a minute .
5. Add yogurt , red chilli flakes and salt .
6. Now strain stock from bones , add about 3 and 1/2 cup of stock or less depending upon the quality of rice .
7. When it starts boiling , add rice draining water , mix properly once , adjust the flame to medium high .
8. When the water dries , reduce the flame to slow , add silted green chillies , coriander and mint leaves. Cover tightly , cook for 8- 10 minutes.
9.Meanwhile , make kebabs and shallow fry them .
