• Goat brians 4
• Turmeric 1 teaspoon
• Salt to taste
• Red chillie powder 1 teaspoon
• Garam masala 1 tablespoon
• Eggs 2
• Coriander green 1 cup
• Mint 1/4 cup chopped
• Green chillies deseeded and chopped finely 1/4 cup
• Black pepper 1 teaspoon
• Paprika powder 1 teaspoon
• Oil to fry
• Lemon juice 2 tablespoons
• Cumin powder 1 teaspoon
• Bread crumbs 1 cup
• 1 egg for frying use
METHOD:
1. Wash and devein the brains.
2. Boil in water for 5 minutes with salt, turmeric and red chillies.
3. Then take them out and in a bowl mix chopped onions, mint, coriander, green chillies, cumin powder, black pepper, paprika, garam masala, egg whites whisked, shredded ginger and make them into equal round pieces. Flatten them and make them look like shami kababs.
4. Heat oil in a fry pan, Dip them one by one in egg, bread crumbs and fry till golden brown.
5. Granish with spring onions, lemon wedges and serves with roti and imli chutney or mint raita.
