2 Avocados
1 tablespoon Lemon juIce
250 g white Crabmeat, well drained if canned and flaked
Fresh Chervil sprigs, to garnish
Brown Bread and Butter, to serve
60 ml Mayonnaise
1 tablespoon Tomato ketchup (sauce)
½ Teaspoon Worcestershire sauce
60 ml single (light) Cream
2 Teaspoons Lemon juIce
1 Teaspoon dry sherry
Pinch Cayenne pepper

How to make Avocado Crab Louis


Halve the avocados, remove the stones, then peel. Slice and brush with lemon juice to prevent discoloration. Then arrange the slices on 4 plates.

To make sauce, mix ingredients together in a bowl, then fold in crabmeat.
Divide the crabmeat mixture between the plates, then garnish each the sprigs of fresh chervil. Serve the salads with brown bread and butter.
