Dissolve flour in a cup of water, mix and form a thick paste.

Heat oil in a clay pot at medium heat for 2 to 3 minutes. Then add whole all
spice.

Once spices start crackling, add onions and fry until golden brown.
|
|
Add ginger garlic paste and fry for couple of minutes.
|
|
Add meat and trotters and cook until oil starts appearing separately.
|
|
Add salt, red chillies, turmeric powder, big cardamom and black cumin seeds, mix
well and add to meat.
|
|
Add flour paste and mix well.
|
|
Add 4 to 6 cup of water and mix well.
Cook covered on low flame until meat is fully tender.
|
|
Once meat is tender and gravy becomes thick, delicious kunna paya is ready.
|
|
Dish out and garnish with julienne ginger, green chillies, green coriander and
lemon. Serve hot.

Mutton Kunna Recipe (in English)
|
Ingredients:
- Trotters: 6 pcs
- Meat: 1 kg (large pieces)
- Ginger Garlic Paste: 2 tbsp
- Salt: as per taste
- Onions: 2 (thinly chopped)
- Red Pepper Powder: 2 tbsp
- Turmeric Powder: 1 tsp
- Yogurt: 1 cup
- Whole All Spice: 1 tbsp
- Big Cardamom: 1-2 pcs
- Black Cumin: 1 tsp
- Flour: 1/2 cup
- Oil: 1/2 cup
Garnishing Ingredients:
- Julienne Ginger: as you like
- Lemon: as you like
- Green Coriander: as you like
- Green Chillies: as you like
NOTE:
If you don't want to use trotters, cook without them. You can adjust
the number of green chillies as per taste.

Method |
- Mix flour in water and dissolve using a spoon. Make a thick paste.
- Heat oil in a pot on medium flame for 3 to 4 minutes.
- Once it is lightly hot, add whole all-spice.
- When it starts crackling, mix and cook a bit until spice becomes golden
brown.
- Then add ginger garlic and cook for 1-2 minutes.
- Add meat and cook until oil appear in a separate layer.
- Add salt, red pepper, turmeric, big cardamom and black cumin to yogurt,
mix well and pour the mixture on meat.
- Add flour paste into the pan.
- Add 4 to 6 cup water, cook on low heat until meat is tenderized well.
- Kunna Paya is ready to serve.
Presentation:
- Remove in a serving dish and garnish with thin ginger slices, green
chillies, green coriander and lemon.
- Serve with tandoori naan or chapati.
