Grind cardamom, clove, black pepper, bay leaves, and nutmeg & mace finely
together.

Mix ground spice with salt and ginger garlic in a bowl.
|
|
Apply mixture on chicken pieces and store aside for one hour.
|
|
Heat oil in a pan and put chicken pieces.
|
|
Cook at low heat.
|
|
If one side is cooked, revert chicken pieces to cook from other side.
|
|
Once chicken water dries out, fry in the same oil until it
becomes golden in color.
|
|
Heat oil in a pan and fry onions to golden brown color.
|
|
Add cardamom and tomatoes to fried onions.
|
|
Add black pepper powder, salt and chicken powder; mix well
well and fry.
|
|
Once spices are fried and oil becomes visible, add rice.
|
|
Add water and mix together.
|
|
Once rice water is dried, mix and place on dam (steam cook).
|
|
Once rice kanni is finished, and rice are cooked well, place
cooked chicken on the rice.
|
|
Ignite coal and place over chicken; put a few drops of oil
and cover the pan for 10 minutes. This will allow coal
aroma to permeate into chicken and rice.

|
Delicious Arabic Mandi is ready.
(Before serving, transfer rice in the serving dish first and then place chicken
over it.)

How to Make Arabic Mandi |
Ingredients:
- Rice: 1/2 kg (soak for one hour before cooking)
- Onion: 1 (thin sliced)

Tomato: 1 piece
- Black Pepper Powder: 1 tablespoon
- Salt: 1 teaspoon (as per
taste)
- Cardamom: 2 pieces
- Chicken Powder: 1 tablespoon (easily available
from market)
- Oil: 1/2 cup
- Water: 1 kg

Method |
- Heat oil in a pan; fry onions to golden brown and then add cardamoms.
- Then add tomatoes, salt, black pepper powder and chicken powder and mix
together.
- Once spices are cooked well, tomatoes become soft and oil starts appearing,
add rice and also water. Cook on fast
flame.
- Once rice boils, and its water reduces and dries, mix rice and cover with
lid. Cook on low flame.
- Check if rice water is completely dries out, place rice on dam. When rice is
cooked fully, place fried chicken on
rice.
- Place a burning piece of coal on chicken, put a few drops of oil and cover
the pan to let chicken and rice absorb
the aroma of coal.
- Delicious Mandi rice is ready to enjoy. (For serving, first transfer the
rice into the dish and then place chicken
over the rice)
