• 8 oz. potatoes
• 4 oz. carrots
• 4 oz. turnip
• 4 oz. runner beans 4 oz. shelled peas
• 1 large onion, sliced finely oil for frying
• 1 clove garlic
• 1 tablespoon ground coriander seeds
• 1 ½ teaspoons chilli powder
• 1 teaspoon turmeric powder
• 1 teaspoon ground ginger
• ½ teaspoon ground cummin seeds
• ½ teaspoon ground mustard seeds
• 2 ¼ oz. can tomato purée water to mix
• ½ oz. creamed coconut
• salt to taste
• squeeze of lemon juice
How to make VEGETABLE CURRY (SABZI KA CURRY)
METHOD:
Chop the potatoes, carrots, turnip and beans, parboil with peas.
Now fry the onion in a little oil and when golden brown add the garlic.
After a minute or two add all the spices and fry briskly.
Add the tomato purée and a little water to make a thick gravy.
Lower the heat, cover the pan and simmer gently for 20 minutes.
Add the creamed coconut, vegetables and salt and cook till vegetables are tender.
Add lemon juice to taste.
