Oil
Pinch of Cumin Seeds
1 tsp Garlic paste
1/2 tsp Ginger paste
a few Curry leaves
4 Whole Green Chilli's
1 tsp red chilli powder
1 tsp salt
1/4 tsp haldi powder
5 Firm Tomatoes (Diced or blended into a smooth paste)
4 or 6 boiled eggs (cut in half)

Oil
Cumin seeds
and 3 Red whole chilli

How to make Tamatar ka Salan
METHOD:
Heat oil add cumin seeds, garlic and ginger paste - fry till golden. Add Green Chilli's and Curry leaves and stir for a minute. Add 1/4 cup water - Add Salt, Red Chilli Powder and Turmeric powder. Bhoon the masala - for a few mintues.
Add Tomatoes and cook until tomatoes are tender and form a paste by mashing it with the back of your cooking spoon.
Now prepare the Tardka / Bagaar in a fry pan.
Pour this on top of the tomato curry.
Now add the boiled eggs and garnish with Fresh Coriander leaves.
Serve hot.
