For the dough:
• 2 cups of bread flour and 1 cup extra for use
• 1 cup whole wheat flour
• Salt to taste
• 1 cup olive oil
• I teaspoon yeast powder
For the top:
• Spinach one pack chopped after washing and drying
• 2 teaspoons olive oil
• 4 small tomatoes [baby tomatoes]
• 3 eggs full boiled
• salt to taste
• Pepper freshly ground in a pepper mill one teaspoon or to taste
• Red chillie flakes 1 teaspoon
• 1 teaspoon garlic paste or 3 cloves of slivered garlic
• Grated parmesan cheese 1/2 cup
• cheese 1 cup or six slices
How to make Spinach and Egg Pizza
METHOD:
1. Mix both the flours in abowl and make a well in the centre.Add 1/2 teaspoon olive oil, salt 1/4 teaspoon.Add 1 and 1/2 cup water and olive oil from cup in the bowl.Slowly stir it.Make sure the dough does not get thin or balls for Stir gently and knead till it becomes smooth and springs back when pressed with finger.Divide the dough in 2 pieces and make balls or peras.Cover with butter paper and leave for 1/2 hour..
2. Now add tomatoes and garlic to a pan and stir till tomatoes are mashed and sauce is thick. Remove from medium heat and add salt and pepper.Leave to stand.
3. Take 2 baking sheets and turn oven at 450 degrees F.
4. Now roll the two peras or dough balls and make them thin.Place on a butter paper and put in oven.Size of baking sheet and paper must be same.
5. On each of the rolled ball of dough add 1 teaspoon of olive oil, 1/4 teaspoon salt and a pinch of pepper and place on baking sheets. Bake for 5 to 7 muntes till the pizza dough crust is lightly browned or golden brown. Now take them out and sprinkle with the sauce ot tomatoes and garlic to the crust.Spead evenly on both the crusts.Take care to keep a small distance of 1/2 inch from edges.Add spinach and cheese evenly on top of both crusts.
6. Place in pizza oven pans and bake for 6-8 minutes. You may rotate the pans in between. When the cheese melts, remove from oven and place eggs cut in diamond shape .Bake for 6 to 8 minutes till top lightly browned in spots.
7. Sprinkle pinches of salt and pepper and flaked red chilies after removal from oven.
8. Pizza for 4 is ready to serve.
