1 large onion
3 cloves garlic
1 ½ -inch fresh root ginger
3 green chillis oil for frying
1 ½ lb. tomatoes, skinned and chopped
1 heaped tablespoon desiccated coconut
Salt to taste
How to make SPICED TOMATOES (TAMATAR KA FOOGATH)
METHOD:
Mince or finely chop the onion, garlic, ginger and chiIlis. Heat a little oil in a pan and fry the onion gently for about five minutes, add the garlic, ginger and chillis and fry for a further 3-4 minutes then add the tomatoes and coconut. Season with salt, mix well and simmer for about 15 minutes.
Note: Preparation time 5 minutes, Cooking time 25 minutes, To serve 4
