* I lb. fresh rose petals
3/2 pint (U.S. 2 cups) water
8 oz. Patna rice
¼ pint (U.S. I cup) double cream
1 ½ oz. sugar
1 tablespoon shredded almonds
* When roses are not in bloom add I dessertspoon of rose water.
How to make Rose Flavoured Rice (Gulab Chawal)
METHOD:
Tie rose petals in two muslin bags. Boil a scant pint (U.S. I I cups) of the water in a saucepan and place petals in it. Take off the heat, cover with a lid. Boil cleaned rice in the remaining water and when the water is absorbed, put the rice in an ovenproof dish. Remove the rose petals from the syrup without squeezing the bags. Add the scented water to the rice. Put the rice in a moderate oven (350° F. — Gas Mark 4) and bake till the rice is cooked. Beat the cream and add with the sugar and almonds to the rice. Chill before serving.
Note: Preparation time 20 minutes, Cooking time 1 hour, To serve 4
