500g baby spinach, washed and spin dried
1 orange capsicums, wash cut into eighths
50g feta cheese, cubed
1/8 cup pine nuts
Dressing:
1/2 cup olive oil
1/3 cup balsamic vinegar
1 tbsp mustard
1 tbsp honey
1 - 2 tbsp fig preserve (depending how sweet you like your dressing)
fresh ground sea salt
fresh ground pepper

METHOD:
Pre-heat oven at 200 degree C. In a baking sheet, drizzle some olive oil, add the capsicum, and drizzle some more olive oil on top. Roast in the oven for 20 minutes
